Pea Quiche

Pea Quiche

Dough Ingredients:
20 tbsp flour
1+1/2 stick butter
1/2 cup water
salt

Veggie ingredients:
1 zuccini
1 bunch green onion
1/2 cup sundried tomato
1 cup peas

Cream ingredients:
1 cup milk
1/2 cup heavy whipping cream
2 eggs
3 tbsp flour
salt
white pepper
crushed red pepper

Preheat the oven 375 f.  Make a dough with the dough ingredients and let it sit in the refrigirator for one hour.  Then roll the dough out until its fit to the tray.
Wash, peel and cut the veggies in small pieces.  Put them over the crust.
Mix the cream filling ingredients and pour it over the veggies.
Cook the quiche for about 45 minutes.  Serve it warm.

Leek Pie (Leek Quiche)

LEEK PIE

Ingredients:
1cup flour
5 table spoon butter (cut into small pieces)
Pinch of salt
3 table spoon cold water

For Leek mixture:
2 leeks (medium)
½ cup mozzarella cheese
¼ cup milk
¼ cup heavy whipping cream
2 eggs
Black pepper, salt
Nutmeg powder

Preparation:
Place flour, butter, cold water and salt into a bowl. Knead the dough until it gets smooth and soft. Grab egg sized pieces from the dough and flatten it with a roller until it fits the tart pan. Place into the pan and push with your fingers so that the dough forms the tart shape. Cut excess dough on the edges after rolling over it. Let the dough rest in the refrigerator until you prepare the leek.

Clean the leeks and divide them half. Cut them in 0.5 inch pieces. Let the leeks stay in a bowl with hot water for 5 minutes. After that let them drain and add mozzarella cheese. Whisk the cream, milk and eggs. Season the cream with pepper, salt and nutmeg. Take the prepared dough from the refrigerator; add the leek- cheese mixture first, and then the cream mixture. Bake at 375 F for 40 minutes.
