-3 cups all purpose flour

-1 cup water

-1 tbsp salt

-1 tbsp sugar

-1 tbsp yeast

***1 cup butter

***1 egg yolk

For the filling:

-1/2 lb lean ground beef

-1 big onion, chopped finely/grated

-1 tbsp salt or to taste

-1 tsp black pepper

-1 tbsp tomato paste

-Fresh Paersley ,chopped(optional)


Step  1

Place the  water, sugar and the yeast into a bowl. Stir well to dissolve the sugar and the yeast.Then, add salt and flour, knead for 8-10 minutes,untill dough becomes elastic and non- sticky.

Step  2

Cook  the chopped onion and ground beef  in a pot  for 10 min.Add  tomato paste,salt ,black pepper and paersley.

Step  3

Then sprinkle some flour on the counter and cut the dough – into 6-7 pieces. Then with a rolling pin, flatten every piece to  about 7-8 inches in diameter.Melt the butter  and brush it on each piece before rolling it up.Repeat with remaining  pieces.

Step  4

Take the first roll of  dough and cut in pieces 3-4 inches long.Take one piece and twist it from the middle and flatten from top and bottom. Place 1 Tbsp  meat mixture  in the middle and close it up,sealing the edges. Grease a baking dish and place the BOREKS in it.Leave it for 30 min. to rise.

Step  5

Preheat the oven to 400F.Mix the beaten egg yolk and water in a small bowl, then brush it on the tops of the  BOREKS. Bake for 30-40 minutes, until they  become golden brown.
