Cokertme Kebab

COKERTME KEBAB – (COKERTME KEBABI)
Ingredients:
1 lb beef fillet steak
5-6 potatoes
4-5 tbsp olive oil
2 cup strained yogurt
2 cloves garlic (minced)
1-2 tsp chili powder
1 tsp cumin powder
1 tsp oregano
1 tsp ground black pepper
Salt
1 cup oil (for frying)
Red pepper flakes (optional for dressing)
Preparation:
Cut the meat diagonally or into small cubes and roast sides in a pan without oil with meat’s own water. Then add olive oil and stir. Pour water if needed and cook until meat is soft. Add salt, black, chili pepper, oregano and cumin. On the other side peel potatoes, cut thin and fry them in oil. Put them on a piece of paper towel to soak extra oil.
Mix yogurt, garlic and salt together. In a different pan stir 2-3 tbsp olive oil with chili powder or red pepper flakes. Put to the serving plate in this order; fried potatoes, yogurt mix, meat and after that olive oil and chili powder mix.

DRY BEANS WITH SAUSAGE (SUCUKLU KURU FASULYE)

Ingredients:
2 cup northern great beans
1 onion (medium)
1 tbsp  tomato paste
1 tbsp pepper paste

5 tbsp  vegetable oil
Turkish sausage (soujuk)

Preparation
1. Soak dry beans in 4 cups of water overnight.
2. Next day drain the water and put the beans in a pot.
3. Add chopped onions, tomato paste, pepper paste, and oil.
4.  Add water covering the beans and about two inches above the surface.
5. Add salt and let it boil. When it boils, lower the heat and let it cook for one and a half hour or until the beans are cooked.
5. Meanwhile cut the sausages in half and cook them in an other pan.
6. Add the cooked sausages to the beans and stir.
7. Serve with pilav.
