Ingredients for the dough:
2 lb flour
1 tbsp salt
1/2 cup vegetable oil
Warm water (as needed)

Filling ingredients:
2 lb fresh spinach (washed and cut)
4 eggs
1 lb cottage cheese
1 cup feta cheese crumbs
1 cup sour cream
salt
green onion (diced)
1 tbsp
1 stick butter

Preparation:
First we prepare filling mixture. Into mixing bowl, put all filling ingredients except butter, and mix together. Then in another mixing bowl put flour, salt, oil, and water and prepare the dough. When we have right thickness of the dough, we form it into smaller balls, and let it sit aside for 15 min. Then on clean cotton table cloth, we start rolling out the dough balls into phyllo with rolling pin. Put vegetable oil over the dough, and let it it for a few min. After we stretch phyllo dough and cut thick edges. Start filling on the edges and roll into tube shape. Brush with butter. Preheat the oven 450 F, then decrease to 425 F and bake for 20 min.

Turkish Bagel (Simit)

Turkish Bagel (Simit)

Ingredients: (Makes 7 bagels)
3+1/2 cup flour (separated)
1 package instant yeast
1 tsp salt
1 tsp sugar
1 cup water (1/2 cup extra water if needed)

For top
1/4 cup molasses
1/4 cup water
Sesame seeds (Browned in pan)

Preparation:
In a deep bowl mix 3 cup flour, salt, sugar and yeast. Make a hole in the center and add water. Knead the dough and add 1/2 cup of flour slowly to make soft, non sticky dough. Divide the dough to 7 pieces and put a damp cloth over them; let them sit for 30 min to rise. Roll out the dough with your hands into long stripes, fold in half, curl and connect the ends to give bagel shape.

Mix molasses with water and dip bagels in it first and then in browned sesame seeds. Put them to the pan on parchment paper and bake at 350 F preheated oven.

Olive Bread

OLIVE BREAD- (ZEYTINLI EKMEK)
Ingredients:
1+3/4 cups water
1+1/2 tsp salt
1 tbsp sugar
3 tbsp butter or margarine
4 cups flour
1 tbsp yeast
Stuffing ingredients:
6 oz jar olive paste
2 tbsp full tomato paste
2 garlic cloves (minced)
Black pepper
Chili pepper
Oregano
On top:
Egg yolk
Sesame seeds or black cumin
Preparation:
Put all bread ingredients into the bread machine and make the dough. If you knead dough yourself, let it stand for some time to rise, after kneading. In another bowl, prepare stuffing. Mix stuffing ingredients all together. Divide the raised dough into two pieces with some oil. Put them to the kitchen counter and roll out by hand and drag from the sides. Don’t put flour. Put half of stuffing, spreading with the hand all over. Start to roll up dough from one side and put it to the oil spread pan. Prepare the other dough in the same way. Apply egg yolk on top with brush; put some sesame seeds or black cumin. Let dough rise double size and put to 350F preheated oven. You can serve warm.

Cheese Pastries

CHEESE PASTRIES WITH OREGANO (PEYNIRLI-KEKIKLI COREK)

Ingredients
1 cup milk
4 tbsp sugar
2 tbsp yeast
3 cup flour
1 tsp salt
1 stick butter (cut small pieces) softened
3 egg yolks dividend
1.5 cup feta and cheddar cheese
2 tbsp oregano
2 tsp freshly grounded black pepper

Add 2 tbsp sugar and yeast in to the warm milk, melt them. (wait 10 min.) Mix all the ingredients; knead it until get a firm dough. Put the dough into oiled bowl and let stand for 1.5-2 hours in room temperature or place to the fridge for 4 hours or over the night. (you can prepare the dough in bread machine). Roll out dough 15×18 inches rectangle in a lightly flour sprinkled counter. Spread cheeses, black pepper and oregano. Fold dough crosswise in half. Roll out dough again 10×18 inches. Take 10 inch long and 0.5 inch wide pieces from the dough. Take from both sides and swirl (twist) each pieces. Round them in to the tray with wax paper. (you`ll see when I demonstrate in the class 🙂 ) Brush the tops with egg yolk. Cook them in 375 f oven for about 40 minutes.

CHICKEN KAPAMA (TAVUK KAPAMA)

Dough Ingredients
1+ 1/2 cup milk (warm)
1 egg
1/3 cup oil
1 cup chopped flat parsley
1 tbsp instant yeast
1 tsp salt
1 tsp sugar
3+3 1/2 cup flour
oil for frying

Stuffing Ingredients
2 chicken breasts
1 onion (chopped)
2 garlic cloves
1 tsp curry powder
1/2 tsp chili powder
1/2 tsp black pepper
salt

Yogurt Dressing
500 gr (17.6 oz) yogurt
1 garlic clove (grinded)
salt

Dressing
2 tbsp oil
1 tbsp tomato paste
1/2 tsp mint

Dissolve yeast with warm milk. Add egg, salt, oil, mint, finely chopped parsley, salt, sugar and 3+3 1/2 cups flour, mix and make inadhesive dough.
Take to 10 pieces and make rolls. Put wet towel on and let ferment.
Cut chicken breasts finely. Sauté onion with oil, add chicken breast and spices, sauté altogether till lightly redden. Put out and let to cool.
Roll out two glands of fermented dough sized as a serving plate (showed in the picture). Put some chicken stuffing to one pastry and close with other pastry.
Press pastry edges with fork. Take bigger oily pan, fry both sides till redden. Serve it. Make all dough glands as a previous one.
Mix yogurt, grinded garlic and salt.
To prepare the sauce, pour 2 tbsp oil to the pan. Heat. Add tomato paste and stir. Add mint, stir. Take from the stove.
Put chicken kapama to serving plates; place some yogurt mix to the center (equally to all plates). Pour some tomato dressing onto the yogurt.

Walnut Rolls

WALNUT ROLLS (CEVIZLI LOKUM)

Ingredients for dough
1+3/4 cups water
1+1/2 tsp. salt
1 tbsp. sugar
3 tbsp butter or margarine
4 cups flour
1 tbsp. yeast

Stuffing ingredients

Chopped walnuts
1 tsp. allspices
1/2 tsp. ground cinnamon
1 tbsp. sugar

1 egg yolk
Sesame seeds

Put dough ingredients to the bread machine and make firm bread dough.
Preheat the oven to 375 F.
Mix chopped walnuts, allspices, cinnamon and sugar. Divide the dough into two pieces. Press out the dough with oily hand (like pizza).
Sprinkle half of walnut onto it, make a roll and cut into ~ 3 inches pieces. Place them vertically on a greased tray. Spread egg yolk and sprinkle sesame seeds on top of rolls.
Place to the oven and bake until golden-browned.

Cheese Pastry

CHEESE PASTRY (POGACA)

Ingredients:
2 sticks of butter
3 tablespoon yoghurt
1 cup feta cheese
1 baking powder
flour
1 egg
Oregano and redpepper

Mix the soft butter, yoghurt and the cheese with your hand. Add the egg white, oregano and the red pepper. You should add the flour slowly, because we need a soft dough. Take small balls and press the balls between your hands a little. Place them into an oven tray and brush the tops with egg yolk. Sprinkle some sesame seeds and bake them at 350F.
